Selfie Does Thanksgiving
Selfie to Wrigley: C’mon Wrigley! Time to go downstairs! Who’s downstairs?
Mr. Selfie: He’s all confused - he got to sleep in on a Thursday, we’ll be here all day and there’s even extra people.
Selfie: Extra people is Wrigley’s favorite!
Mr. Selfie: Yeah. That’s why he likes you.

Selfie: Wow.
This should probably be called “Mr. Selfie Does Thanksgiving” as Mr. Selfie does all the heavy lifting for most holidays (but like, it’s my site so I can take credit for whatever I want like the monster I truly am but I digress). One year, Mr. Selfie flew in from Chicago on Christmas Day and I got to prepare the whole meal – Cornish hens. Ah, a distant dream that was six years and two addresses ago (“Oh yeah? It’s so tough to kick back and drink while someone makes you a beautiful meal?” Hmm. Excellent point.)
Anyhoodles, Mr. Selfie makes an absolutely amazing multi-dish meal which is made according to a rigidly-adhered-to schedule despite getting a face and neck full of boiling water and having to wear an ice pack around his neck looking deeply crazy while the rest of us drank mimosas and watched the Bear’s game – Dude’s a hero.
As we live in a culturally-blended home, Thanksgiving includes the usual turkey, mashed potatoes (GIVE ME DA STARCH), green bean casserole, stuffing and cranberry sauce in addition to Mr. Selfie’s famous stuffed shells. We start the morning with tamales and mimosas which would be my favorite part except…GIVE ME DA POTATOES(!!!!!!!). We finish up with the only thing I make – the pie. Normally, I make a pumpkin pie but honestly, I have yet to find a great recipe that fits what I’m looking for but this pecan pie is IT.
Okay, so real talk, the only amazing thing about this pecan pie is that I make it. Well, that’s not true.It also tastes good and is gluten-free, dairy-free and refined sugar-free which maybe doesn’t sound all that great to you but here’s my deal: First, I can’t…digest gluten which is a super neat story for some other time when you’re super bored. Second, I make pretty darn healthy food. Mr. Selfie is the one who makes the stuff with cheese and butter and my ignorance is bliss and ugh, I really can’t with corn syrup (unless it’s in skittles and then gimme da skittles – you can tell this is a theme in my life.) Third, I grew up eating syrupy, uber-sweet, take-me-to-the-dentist-please pecan pie and I’m just not here for it (Sorry, Mom! I love you!) This pie checks all the boxes: It’s sweet-but-not-too-sweet, it’s not hard to make and it tastes delicious with or without ice cream. I can’t tell you…a gosh darn thing about making any of the delicious food Mr. Selfie made but I can tell you this recipe can be found at allergyfreelaska.com and I’ve been using it for years and love it!
